Corn is by far one of my FAVORITE vegetables to use in recipes.
I lOVE CORN!
Corn on the cob, popcorn, corn cake, grits, hot water cornbread, creamed corn, corn chowder, corn chips, tortilla chips, corn tortillas, corn nuts, cornbread, corn pudding, corn syrup for baking, and any breakfast cereal made from corn! You can’t have a crispy taco without a corn tortilla.
And if you pair it with my other favorite vegetable the potato, well…. don’t get me started on that long list.
Summer is the season for fresh corn. It will be coming out of your ears by August (HA!) I couldn’t help make that joke.
We grew corn in our garden growing up like most other vegetables and it was really a treat to pick, husk and eat. If it was a super sweet variety you could eat it raw.
Putting it on the grill with a little butter or olive oil to get it started is easy enough and you can up the ante by smothering it with quest or parmesan cheese, herb oils and lots and lots of butter. Compound butter recipes here to get you inspired.
