This Healthy Maple Glazed Meatloaf recipe is so tasty and moist and it’s also gluten free because there are no breadcrumbs! Most meat loaf recipes call for breadcrumbs or soaked bread of some sort, but I wanted to try a different route because sometime you may not always have fresh breadcrumbs in the pantry and you certainly don’t want to use those ones that have been in your pantry for who knows how long.

 

This recipe is moist and full of flavor that comes from added milk/nut milk, sweet roasted bell peppers, fresh herbs and of course garlic.

I couldn’t stop there so I added a sweet maple glaze on top that well…tops it off perfectly!

The perfect thing to serve fro a weekend dinner or when friends stop by. I served it here with Purple Mashed Potatoes, but you can always serve it with Classic Mashed Potatoes or this Purple Sweet Potato Mash.

Healthy Maple Glazed Turkey Meatloaf

Ingredients
  • 2 lbs Ground Turkey
  • 2 eggs
  • 1/2 cup milk ( or unsweetened nut milk)
  • 8 small sweet multi colored bell peppers or 1 red, orange or yellow bell pepper
  • 1/2 cup small diced onion
  • 1 large clove of finely chopped garlic
  • 1 tbsp chopped fresh rosemary or 1 tsp dry
  • 1 tbsp fresh sage or 1 tsp dry
  • 1 tbsp fresh marjoram
  • 1 tsp garlic powder
  • 1 tbsp black pepper
  • 2 tsp salt
  • 2 tbsp olive oil
  • For glaze
  • 1 cup ketchup
  • 2 tbsp maple syrup
  • 1 tbsp tomato paste
  • 2 tbsp brown sugar
Directions
Step 1
Preheat the oven to 350F
Step 2
Begin by charring the bell peppers in a cast iron skillet with the olive oil on med to high heat. Cook until the peppers are blistered and soft. Set aside to cool.
Step 3
Prep your onion, garlic and herbs.
Step 4
Combine eggs and milk and blend .
Step 5
Remove the seeds and tops from the bell peppers and chop finely.
Step 6
Add all of the meatloaf ingredients together in a large bowl and mix well making sure all of the meat and ingredients blend evenly into each other.
Step 7
Line a sheet pan with parchment paper or us a non stick meatloaf pan.
Step 8
Transfer the meat mix onto the sheet pan and form into an oval dome and smooth the top.
Step 9
Cover loosely with aluminum foil and bake for 45 minutes.
Step 10
Meanwhile make the glaze. Add all ingredients and blend well.
Step 11
Remove the meatloaf from the oven to glaze.
Step 12
Using a pastry brush or soup spoon, Spoon the glaze over the meatloaf in an even spread.
Step 13
Return to the oven to brown on top for 15-20 minutes.
Step 14
Remove from the oven and let rest and cool for about 30 minutes before cutting.
Step 15
Enjoy!
