

Okra Corn and Tomatoes are a Southern staple in the summertime. The freshness of the sweet corn, juicy tomatoes, and just picked out of the garden okra makes a great combo veggie side dish.
Fresh herbs and butter help to bring out all of that garden goodness. Some people don’t care too much for okra because of the slime it can produce when cooked. I found that grilling the okra over open fire cuts it way down. If you don’t have a gas stove you can grill it in a cast iron skillet or grill pan until charred on all sides.
You will typically find fresh okra in the market from mid-June to the end of August. You can still make this dish with frozen okra if you miss the season but still have corn and tomatoes to use.
I love the addition of fresh herbs like basil, thyme, tarragon, and marjoram. Even a squeeze of lemon or lime juice will brighten up the dish.
*Note: Use a corn stripper gadget. It will make life much easier and faster. After stripping the corn off the cob, use the back of the knife to ‘milk’ the cob and get every last bit of sweet corn juice and kernels. This is where a lot of the sweetness is and will add a lot of flavor. Don’t leave this step out.

Okra Corn and Tomatoes
Ingredients
- 3-4 ears of corn
- 1 medium size tomato
- 10 okra pods
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 cup *fresh herbs of your choice: thyme, basil, marjoram
- 1 tsp garlic salt
- Salt and Pepper to taste
Instructions

Chop tomato in 1/2 inch size cubes. Sprinkle lightly with salt and set aside.

Grill washed okra directly over a gas flame or use a grill pan or cast iron skillet on medium high heat. Char on all sides. Set aside to cool enough to handle.

Strip the corn off the cobs and add to a medium size skillet with the butter and olive oil. Then carefully 'milk' the cobs with the back of a knife and add to the corn. Sprinkle with garlic powder and some salt and pepper.

Chop the okra into 1/2-1/4 inch slices and add to the corn. Saute' for a total of 10 minutes.
