Peaches and Cream Popsicles with Honey and Cardamom

I count the days when peaches are in season and I can start my mad rush to prep and freeze to enjoy all year long. I mean, who could miss out on peach cobbler for 9 or 10 months out of the year?! Not me. Although the first two weeks or so are not that great so I patiently wait for prime ripeness.

It was really hot here in Los Angeles when peaches finally got here so the first recipe I knew I would make would be these Peaches and Cream Popsicles with Honey and Cardamom. Very creamy and fruity, but these are made with the goodness of greek yogurt not heavy cream.

Just takes a few minutes to get the recipe together. Make sure your peaches are ripe and juicy. They need to taste like peaches not water.

You will need:

6 popsicle molds

popsicle sticks

Peaches and Cream Popsicles with Honey and Cardamom

Ingredients
  • 1 ripe peach
  • 1 1/2 cups greek yogurt
  • 3 table honey
  • 1/2 tsp cardamom
  • 1 tsp vanilla
Directions
Step 1
Prepare your popsicle molds.
Step 2
Add vanilla, cardamon, and honey to the yogurt and stir until combined.
Step 3
Segment the peach into wedges about 1/2 inch to fit into your popsicle molds.
Step 4
Add a peach slice first into a mold, then gradually add spoonfuls of the yogurt mixture to about halfway. Tap the molds on the counter to make sure any holes are filled. Add another peach slice and fill with the yogurt mixture to the top.
Step 5
Top them off with your lids and sticks and freeze for at least 4- 6hours.
Step 6
To release them from the molds, fill a bowl with hot tap water and dip a popsicle in the water for about 10 seconds and the popsicles should release easily.
Step 7
Enjoy!
