For a long time I wasn’t a fan of radicchio. I loved to look at them, but I thought they were a little bitter. I had had them in salads and even grilled, but only recently had I seen other beautiful varieties in my stores like the pink ones with little red spots in my salad here. I actually have four varieties in this Radicchio Salad recipe that vary in color and taste which makes this salad not only pretty, but tasty too.
This Radicchio Salad recipe also has Asian Pears and a dressing using Blood Oranges to give it some sweetness and balance.
Radicchio can be found all year long, but the peak season is mid Winter and early Spring which makes it perfect to serve with your Christmas and New Years Dinners or used to make captivating mini salads for starters.
