It’s about time Beets are getting their just due. Like other vegetables we hated when we were kids; Brussels Sprouts and Cabbage, as in this Braised Purple Cabbage dish, we just needed to learn the proper way to cook them.
Roasted Beets are a great vegetable to have in your arsenal. Other than just eating these delicious and earthy jewel tone gems on their own, you can use them to brighten up many salads and side dishes like Black Rice and Roasted Beets, Pickled Beets and Purple Cabbage Sauerkraut, Pickled Beet Eggs, and the most beautiful Hummus made with beets.

We’ve all had Roasted Beet Salad with Goat Cheese in some form or another in a restaurant or cafe’, but I wanted to use beets in uncommon ways like this Black Rice and Roasted Beets. This taste great hot or cold and makes for a very festive side dish that is worthy of your best roasted meats or holiday dishes.
One of my favorite ways to eat beets is simply roasted cut into wedges and dressed with the best extra virgin olive oil, salt and pepper, and balsamic vinegar. When shaved very thin they can also be eaten raw.
Tip: Other flavors that pair well with beets are:
ORANGE
SOFT CHEESES LIKE GOAT AND BURRATA, RICOTTA
THYME, BASIL CILANTRO,
CHIVES, SHALLOTS
